This morning I woke up with the idea of creating a whole new cookie that I had never seen before, just for fun! I had egg whites left from ginger bread men that I wanted to put to use which is what seeded the idea for this recipe.
Not only are they low sugar, gluten free and dairy free, they taste amazing! They worked first try and they were so simple to make!
Makes 20. Prep time: 10 mins.
1 cup pitted dates
2 egg whites
2 cups almond meal
1/4 cup coconut sugar [or regular sugar]
1 tsp vanilla
1/2 tsp cinnamon
100 gm dark chocolate chips
Pinch of Celtic salt
1/2 cup pistachio nut chopped finely
Preheat the oven to 180 c.
Place egg whites and dates in the blender and blend till smooth.
Put egg mixture and all other ingredients [except pistachios] in a mixing bowl and combine well.
Make 1 Tbsp size balls from dough mixture and roll in the pistachio nuts. Place each ball on grease proof paper on a baking tray. Gently flatten each ball.
Bake in oven 15-20 minutes till golden.
These yummy treats are all protein. They are great for keeping you going between meals and easy grab and go food for when you are on the run. Almonds and pistachios are awesome brain food, and chocolate is a wonderful mood lifter.
